What is this sausage you speak of? Linguica (Ling-GWEE-zuh) is a pork sausage heavily spiced with paprika, chiles and garlic. I was first introduced to this taste of goodness in college along the Central Coast of California. Every local restaurant served linguica breakfast, lunch, and dinner. My favorite mode of transport to my tummy is via a farm fresh egg on a Sunday morning. Another quick meal that is sure to satisfy the whole house can be served on a hoagie roll with sauerkraut or gilled onions. Linguica can be a fun added addition to any bbq or week night meal.
